I'm just wondering if it's actually legal for them to ask you to complete and sign a form with ALL your credit card details on it, including the card's registered address and the 3 digit code on the back of the card. Doesn't that give the business the opportunity to use your data fraudulently?

"Official Answer from Easirent" -

Similar to most rental car providers, Easirent are required to hold payment details on file to cover any post-rental charges. These charges may be for additional damage to the vehicle and/or most frequently, penalty charge notices (PCN’s) such as parking tickets, unpaid toll charges, congestion fines, speeding tickets, etc. PCNs arrive up to 6 weeks later and need to be processed and charged to the responsible hirer.
In terms of safety, we use PHS Datashred to ensure any written, stored documents with sensitive information are destroyed securely. Every part of handling customers’ data is done securely and if ever a customer is in doubt that their card information has been used wrongly, your bank or building society will be able to trace it immediately.
We hope this answers your questions in relation to paying for hires. Similar to paying online when you enter your credit card information, you are simply writing it down to be safely stored until no longer needed and destroyed.

Regarding the comment about data protection
Easirent Manchester CC sales rep showed me another customers private rental agreement. I was told that the customer had returned a damaged vehicle and as a consequence would be losing the entire £1250 hold on his credit card. I was warned that this could 'easily happen to me' if I did not purchase the relax insurance. I am current persuing this company for a refund through the BVRLA who regulate EasiRent. I would recommend everyone does the same.

I notice that Easirent has only answered just one question/comment on here - with a stock answer too! They don't address any of the other "observations" from reviewers - further proving what a terrible business they run.

As above. Please just stay away from this company. They frequently levy additional charges for no justifiable reason.

Corrine I would not give this Company the time of day, let alone credit card details.
My dealings with them was all bad. They are shysters and I am sure they reward their staff with bonuses on fraudulent extra fees and charges.
Deal only with the reputable companies.

I think in terms of data protection they shouldn't hold onto these details longer than they have to but yes you are trusting those details with the company to use them responsibly. My opinion when I went in was they were not trust worthy and I wasn't willing to leave these details with them. It's down to the company to ensure they destroy these details.
