The roommate I leased a room doesn't want to leave even though I gave him a 30- notice. What should I do?

Hi Marci.
I am sorry to hear that you are having issues with your tenant.
The exact law depends on the State you are in - as housing law is left to State Legislature, rather than Federal. However most States base their law on 2 Federal acts (Uniform Residential Landlord And Tenant Act (URLTA) or the Model Residential Landlord-Tenant Code).
Essentially if you have given your tenant notice, and they have not left the property, the next step is to go to housing court. There is some general information on the process here: https://www.law.cornell.edu/wex/eviction#Court_Proceedings - without knowing the State you are in I cant be more specific on the next steps.
Good luck.
